The cake was new - a Pink Velvet Cake. It was light, airy, and tasted like a box cake in the best way. From first bite, all I could think was Betty Crocker. It was an instant transport back to childhood birthday parties. Chocolate PB+J Cake (with the most delicious dark chocolate cake)

I made it all in one bowl, it was literally so easy to whip together, it broke a lot of the cake “rules” I head a lot about on the Great British Baking Show. Yet it was nothing short of amazing. The Chocolate PB+J Cake was layers of the richest dark chocolate cake, peanut butter mousse, raspberry compote, and shortbread pieces. Imagine creating a PB+J moment on top of an Oreo - that’s kind of what this was like.

I do get the post vacation blues. It’s so bad - it’s that transition back into norma life that’s truly not it for me. But this Raspberry + Oreo Layer Cake helped ease the pain. All pink + decorated to a Valentine’s theme. And very, very delicious. It’s chocolate-y+ fresh + so many layers of raspberry flavor. My favorite - a fresh raspberry curd + a cream cheese oreo filling that come together for a dreamy middle layer that gives this chocolate covered strawberry vibe.

Crunchy + Rich Chocolate Peanut Butter Cake

This is a cake that really has it all. Super chocolate-y layers that sit on top of a graham cracker + pretzel crust (my personal favorite part) with the most delish peanut butter-cheesecake layer nestled in between.
