Long story short, I landed on this Butternut Squash, Apple, + Leek Soup. Like a traditional butternut squash soup, it’s one of the easiest soups ever to make, + it comes with lots of hands off time (which made time for Peloton-ing during the cooking process).

I call them my “must make” recipes. I look forward to making year after year, & they’re special. One such Fall item: this Spicy Tomatillo, Sausage + Butternut Squash Soup. It’s so fresh, so full of spicy Mexican flavors, and so perfect for a cozy night in.

Because cooking with wine is my jam! It just means your going to end up with something de-lish.
Read MoreTomato soup is like my white whale. I’ve made so many tomato soups over the years, and I felt like I could never really nail it. The no. 1 issue - always the texture. It always turned out so grainy and just not perfectly smooth like canned stuff. & that was my goal - recreate the tomato soup I grew up eating, but make it better & free of the not so awesome shit we all know is hidden in canned products that don’t go bad for like 3 years. When Sunday finally came around, and my husband asked me what I wanted to do with my day off, the

Not in a bad way where I like pick myself apart, but more of a "this is your issue, you have no one else to blame, and how are you going to get over it" kind of thing. Like have you ever met a person that just victimizes themself at all times? Like in their eyes, there's always someone

But not like juice cleanse because I don't have the will power to just not eat anymore, so when I say cleanse I really mean a day to just power my body up with super foods. Going through one day a week where I try to keep things pretty liquid and low cal is what I feel allows me to hit a reset button. I mean, in my mind it's what allows my body the opportunity to flush out all the bad stuff & keep my shit on track.
Read MoreI love tomato soup, and what I love even more is dunking crispy and melted grilled cheese bites into my soup. I mean what's not to love about it? It's so fun! We haven't done any classic tomato soup with grilled cheese dunkers this year, and as soup season comes to end it's got to happen! So I bring to you my new favorite thing - mini-grilled cheese. Small little grilled cheese bites made with way less butter and way less calories (praise!), but still all the crunchiness that's perfect to soak up a creamy tomato soup. Use a petite baguette as the base, thinly sliced to whip up little baby grilled cheese bites, and then load it up with the best cheese and even some veg. That's exactly what I did for our week night, pre bowling fuel - Tomato & Chickpea Soup with Mini Grilled Cheese Bites.
