Rosé + Peach Spritz

Things I’m excited about right now: packing for our upcoming Hawaii trip, the weather starting to turn in WA + officially packing away my Winter coats, and this glorious 3 day weekend that was filled with patriotic outfits and backyard hangs. On a food front, the fact that it’s white peach season has me amped. Naturally, a Rosé + Peach Spritz feels appropriate. A fruity, peachy twist on the classic Aperol Spritz. A little peach infusion adds extra sweetness, and using rosé bubbles is just a fun twist. Subtle little nuances make it Summery + fun, the perfect Memorial Day drink.

Peaches are here! Take advantage of it!

 
 

The white peaches that end up at the local grocery store by my house are literally sent down from heaven + the most perfect fruit of all time. I LIVE for these specific peaches. Biting into one is like biting into the juiciest + most perfect peach candy. They’re fresh, so flavorful, and truly addicting. So to say I was excited see them at the store during my holiday weekend shopping is an understatement.

The key - buy enough to throw in the cocktail + to eat on their own. I went back to the store the next to buy more because I’m so obsessed!

A simple twist on a classic

This drink really is as simple as making an aperol spritz. It can be as simple as just throwing in some peaches for some added flair. I went the step of infusing the aperol with peaches - letting them just sit in the aperol for about an hour before serving. And then I reached for a peach flavored soda bubbly water for a little extra dose of flavor. Fun, peachy, and just a good spritz.

The final touch - a couple sprigs of fresh thyme added in for color. I can’t even express the amount of joy it brought me to pick these herbs from my backyard garden. A sign that the best season of the year is here, weeks of joyous Summer cooking are ahead of us, and that’s something I’ll cheers to.

 
 

For the cocktail (makes 1)

  • 1 white peach, sliced into wedges

  • 3 oz. aperol

  • 4 oz. rosé prosecco

  • peach flavored sparkling water

  • fresh thyme sprigs

Start by placing the aperol + about 3 peach wedges in the fridge. Let them sit for an hour or 2.

When it comes time to enjoy a cocktail, add the aperol, proseco, and sparkling water to your glass. Stir, add in a bit of ice, and top with fresh thyme sprigs. Sip + enjoy!
